2019 Casa Viva Carmenere, Valle Central, Chile
HARVEST A dry season with moderate temperatures, the grapes were harvested during the second half of April
VINIFICATION All grapes were destemmed and crushed in stainless steel tanks, then inoculated with selected yeasts. During fermentation temperatures peaked at 32°C. Maceration then lasted for 7 days and later around a third of the wine was left to maturation in used French barrels for about 6 months, the rest of the wine was kept in stainless steel tanks. The grape composition of this wine is made up of 90% Carmenere, with 10% of Syrah.
SERVE WITH Red meats, pork ribs, and Pomodoro-based pasta. Best enjoyed between 16-189C.
