2022 Bryterlater Ernest Pinot Noir, North Canterbury

Able clone. The basis of this wine is the synergy between alcoholic and carbonic fermentation. Carbonic fermentation (think Beaujolias) achieves the lifted aromas of maraschino cherry, clove. The synergy creates a lovely silky, supple texture. 10% foot crush, 20% destemmed, 70% whole bunch. Basket pressed. Bottled February 2023.

Bryterlater wines are made with intent, honesty, and an abundance of respect for the process. The winery works thoughtfully in the vineyard, using organically farmed grapes from select sites within the North Canterbury region.

The winery adheres to minimal intervention practices, in an endeavor to offer wines that speak for themselves, rather than the ego of their maker. They acknowledge whatever the season gives, and use it to guide the process and decisions.
Bryterlater finds great joy in making youthful vibrant wines released in the spring, but also relish the discovery of longer aging styles which demand more nurturing and patience before coming into their own.
