Picked with tropicality and acidity in mind, the balance works harmoniously. Barrel ferment, aged on lees for a further 10 months. Racked by gravity in January. Wine is completely clear and clean at this point. Lees is settled out and a portion is amalgamated to build complexity and texture to the palette.

Bryterlater wines are made with intent, honesty, and an abundance of respect for the process. The winery works thoughtfully in the vineyard, using organically farmed grapes from select sites within the North Canterbury region.
The winery adheres to minimal intervention practices, in an endeavor to offer wines that speak for themselves, rather than the ego of their maker. They acknowledge whatever the season gives, and use it to guide the process and decisions.
Bryterlater finds great joy in making youthful vibrant wines released in the spring, but also relish the discovery of longer aging styles which demand more nurturing and patience before coming into their own.
The brand intends to create deeply considered, juicy wines that capture the energy of the vineyard, and bring immense joy to the beholder.
